Flower-shaped cuttlefish with creamy zucchini and lumpfish roe
Crispy “polenta” (mush) slice wrapped with Alto Adige’s “speck”, served with creamy “provola” (smoked mozzarella) and Pistacchi
– FIRST COURSES –
Fresh “mezzelune” (half-moon shaped filled pasta) stuffed with minced groper, seasoned with clementine-flavoured octopus “ragout” sauce
Fresh “tagliatelle” (long, flat, large ribbon-shaped pasta) with hare “ragout” sauce, artichokes, curry and pine nuts

Pistacchi Seabass wrapped in bacon, served with leek’s mayonaise and duchess potatoes
Beef fillet on a bed of bread with truffle sauce, served with Porcini mushrooms and slices of Black Fall Truffle (Tuber Uncinatum)

Pistacchio Creme Anglaise, chocolate and nuts “Rubik”
Centerpiece of traditional Italian Christmas pastry: “panettone”, “pandoro” and special homemade “gianduia” nougat with nuts
